1 head romaine lettuce, chopped
1 medium cucumber, sliced
1 large carrot, shredded
1-12.5 oz can chunk chicken breast
1-11 oz. can mandarin oranges in juice
1 cup peanuts
Chop lettuce into bite size pieces, slice cucumbers, and shred carrots. Arrange 1/4 of the lettuce on each of four dinner plates and top each with 1/4 of the cucumbers and carrots. Top each with 1/4 of the chicken and mandarin oranges. Sprinkle 1/4 cup of peanuts on each salad. Serve with peanut dressing.
1 cup peanut butter
1/4 cup lime juice
1/4 cup soy sauce
1 tsp. minced garlic
1 tsp. sugar
1/2 cup water
Add all ingredients to blender and blend for 1 minute. Serve immediately over salad.
