Ingredients:
8 pieces whole wheat bread (We like Dave's Killer Bread.)
10 slices crisp bacon
2 roma tomatoes
1/2 pound monterey jack cheese (cheddar, mozzarella, provolone or smoked gouda are other favorites)
2 Tbsp. butter (coconut oil is a great alternative)
Make Dinner:
In a large skillet, crisp bacon and set aside to drain on paper towels. Break each slice in half to make 20 halves. Heat separate frying pan or griddle over medium heat. Butter one side of 8 slices of bread. Place 4 slices of bread, butter side down, in warm frying pan or griddle. Place a layer of cheese on each slice. Top cheese with 5 slices of bacon (remember these are 1/2 slices). Follow bacon with 3 slices of tomato. Cover each sandwich with the second slice of bread, butter side up. Cook over medium heat for 5 minutes or until golden brown. Flip each sandwich and cook another 5 minutes until golden. Serve sandwiches with a fresh green salad (the lettuce in BLT!), pretzels, and an ice cold beer.
