Serves 4-6
Ingredients:
2 Tbsp. olive oil
1 pound boneless, skinless chicken breast cut into 1/4" cubes
1 tsp. garlic salt
1 tsp. black pepper
1/2 cup BBQ sauce
1/4 cup purple onion, sliced thin
2 Tbsp. cilantro, finely chopped
1/2 pound mozzarella cheese, shredded*
1 whole wheat pizza crust (recipe below)
Make Dinner:
Preheat oven to 375 degrees. Heat olive oil in a large skillet over medium heat. Add chicken pieces, salt and pepper Saute chicken until just cooked through, about 10 minutes. Drain any liquid in the chicken and set chicken aside.
Spread whole wheat pizza dough 1/4" thick on a 12" pizza stone or cookie sheet. Spread an even layer of BBQ sauce over crust. Top with cooked chicken pieces and onion slices. Spread cheese generously over pizza. Top cheese with cilantro. Bake for 20 minutes until cheese is golden brown and bubbly. Allow pizza to 'rest' for 5 minutes before cutting after removing from oven.
*Chef's Tip: Use provolone cheese in place of mozzarella. It is more affordable, just as melty and amazingly flavorful. No one will know your delicious secret!
Whole Wheat Pizza Dough
1 1/4 ounce package active quick rise dry yeast
1 tsp. sugar
1 cup warm water
2 cups whole wheat flour
1 tsp. garlic salt
3 Tbsp. olive oil
Cooking spray
In a medium bowl, dissolve yeast and sugar in warm water. Let stand until milky and foamy, 8-10 minutes. Add flour, salt and olive oil. Use bare hands to blend dough quickly until combined. On a lightly floured surface knead dough for 5 minutes. Do not over knead! Spread dough 1/4" thick onto 12" pizza stone or cookie sheet coated with cooking spray. Top with favorite toppings and bake for 20 minutes until golden brown.
