Ingredients:
6 English muffins
1 pound sliced cooked ham (If you don't have leftover ham, Canadian bacon from the deli works great.)
12 boiled eggs
Hollandaise sauce (Recipe Below)
Paprika (optional for color)
Make Dinner:
Toast English muffins until golden brown. Slice in half and top with sliced ham. Peel and slice boiled eggs and place on top of ham. Drizzle ham and eggs with fresh, hot Hollandaise sauce. Sprinkle with paprika and serve immediately.
Hollandaise Sauce
4 raw egg yolks
2 Tbsp. lemon juice
1 stick butter (1/2 cup), melted
1 tsp. salt
In a metal mixing bowl, beat egg yolks and lemon juice until thick, about 5 minutes. Boil 2 cups of water in a medium sauce pan. Place metal bowl on top of pan to heat egg mixture. Do not allow eggs to cook! Stirring constantly, drizzle melted butter into egg mixture. Remove from heat, add salt and mix well.
