Ingredients:
4 pork chops, bone in
Salt and pepper
2 Tbsp. olive oil
1/4 cup brown sugar
3/4 cup warm water
2 Tbsp. vinegar
2 Tbsp. soy sauce
1 Tbsp. yellow mustard
1/4 cup dried cranberries (We used Craisins.)
Make Dinner:
Season pork chops with salt and pepper. Heat olive oil in a cast iron skillet over medium heat. Place pork chops in hot skillet and saute over medium heat 5 minutes on each side.
While pork chops are cooking, dissolve brown sugar in water in a small mixing bowl. Add vinegar, soy sauce and mustard. Mix well. Pour mixture over pork chops. Sprinkle dried cranberries over pork chops. Allow pork chops to simmer for several minutes over medium heat. Turn pork chops once allowing cranberries to incorporate into liquid. Simmer for 5 minutes. Turn chops one more time and simmer for another 5-7 minutes.
