We call it "Dinner in the Spotlight". We'll help you stick to your New Year's resolutions and get through the year in the most delicious way. To kick off the year of "clean and lean eating", we're grilling thin skirt steak and topping it with a bright, colorful salad made of garbanzo beans (the primary ingredient in hummus), fresh tomatoes, cilantro and lemon juice. It is so mouthwatering delicious, you just may "diet" all year long! Welcome to 2015! It's a great year to Make Dinner!

Ingredients:
2 cups jasmine rice
4 cups water
1 tsp. salt
1 tsp. pepper
1 15.5 oz. can garbanzo beans
2 Roma tomatoes, chopped
2 Tbsp. cilantro, chopped
2 Tbsp. lemon juice
2 pounds skirt steak
Make Dinner:
Place rice, water, salt and pepper in a medium saucepan. Cover tightly and bring to a boil over high heat. As soon as rice begins to boil, reduce heat to low. Simmer rice over low heat for 20 minutes. Remove from heat, remove cover and fluff rice with a fork.
While rice is cooking, drain liquid from garbanzo beans. In a medium mixing bowl, combine garbanzos, chopped tomatoes, cilantro, lemon juice and salt. Mix to combine.
Salt and pepper steak to taste. Heat BBQ grill to medium high. Grill steak 5 minutes per side. Serve steak with steamed rice topped with tomato, garbanzo salad.
