Serves 6-8
Ingredients:
2 cups rice
4 cups water
1 Tbsp. minced garlic
4 Tbsp. canola oil
1 cup chopped deli ham
12 oz. shrimp, peeled and deveined
1 red pepper, chopped
1 cup pineapple chopped
1 cup green onion, chopped
1/2 cup soy sauce
1/2 cup sweet chili sauce
3 eggs
Make Dinner:
Bring water and rice to a boil in a covered saucepan. As soon as rice boils, reduce heat to low and simmer for 20 minutes.
While rice is cooking, heat 2 Tbsp. canola oil in a large frying pan over medium high heat. Add garlic and heat for 2 minutes. Add shrimp and ham. Saute for 5 minutes over high heat. Add red pepper and pineapple. Saute over high heat another 5 minutes. Mix well. Add green onions and saute for 1 more minute. Remove from pan and set aside. In same large frying pan, heat remaining 2 Tbsp. canola oil. Add rice to hot oil and saute over high heat. Stir often. After 7 minutes, use a wooden spoon or spatula to move rice to one side of pan. Crack eggs onto open side and scramble. Once eggs are scrambled, incorporate them into the rice. Add soy sauce and sweet chili sauce. Mix well. Add shrimp and ham mixture to rice and stir until combined. For extra spice and 'local flavor', serve with your favorite hot sauce.
