5 boneless, skinless chicken thighs (You can use breasts, but thighs are juicier.)
Juice of 2 lemons
2 cups Italian breadcrumbs
2 Tbsp. olive oil
Preheat oven to 375 degrees. Place Italian breadcrumbs in a medium mixing bowl. Squeeze lemon juice generously over both sides of each chicken thigh. Roll chicken in breadcrumbs and place in 9x9 baking pan. Bake for 35 minutes. Serve with a twist of lemon.
Golden Yams with Honey Butter
5 golden yams
1 stick of salted butter, softened
3/4 cup honey
Pierce yams 5-6 with a fork. Microwave on high for 5 minutes to begin the cooking process. Place in 375 degree oven alongside chicken. Bake for 30 minutes. Serve with Honey Butter.
To make Honey Butter, place butter and honey in a food processor. Pulse until smooth and creamy.
