Serves 6
Ingredients:
2 pounds chuck steak, sliced thin
1 medium onion, chopped
4 oz. package crimini mushrooms, chopped
1 1/2 cups soy sauce
1/2 cup orange juice
1/2 cup sesame oil
2 Tbsp. minced garlic
Juice of 1 lime
2 Tbsp. olive oil
1 cup sweet chili sauce (This is not optional!)
1 head of crisp romaine lettuce, separated into individual leaves
Make Dinner:
Chop beef, onion and mushrooms. Place in a large mixing bowl with soy sauce, orange juice, sesame oil, garlic, and lime juice. Marinate meat for 20 minutes. (For a great make ahead, marinate over night.) Heat olive oil in skillet over high heat. Add meat and vegetables without marinade. Saute meat mixture for 10 minutes over high heat. Remove from heat and mix in sweet chili sauce. Serve in lettuce cups with a side of Sticky Rice.
Sticky Rice:
2 cups rice
4 cups water
2 Tbsp. rice vinegar (If all you have is plain white vinegar, use it. It will work.)
Place rice, water and vinegar in saucepan. Bring to a boil over medium high heat. As soon as rice boils, reduce heat to low. Simmer for 20 minutes. Serve immediately.
