15 minutes to prep and bake Garlic Bread (Add 35 min. for Roasted Garlic)
Serves 5
Ingredients:
1 loaf fresh Italian bread
Roasted Garlic (recipe to follow)
2 Tbsp. extra virgin olive oil
2 Roma tomatoes, sliced
1/2 cup fresh basil leaves
4 oz. pepperoni slices
4 oz. genoa salami slices
1/2 pound mozzarella cheese, grated
Make Dinner:
Preheat oven to 375 degrees. Slice loaf of bread length wise creating two halves. Spread Roasted Garlic generously on each half of bread. Drizzle each half with 1 Tbsp. of olive oil. Place sliced tomatoes in a single layer on each half of bread. Layer pepperoni and salami atop tomatoes. Top each half with a generous helping of cheese. Top with basil leaves. Bake at 375 degrees for 15 minutes.
Roasted Garlic:
Preheat oven to 400 degrees. Slice 1/2 inch off the tops of two whole bulbs of garlic exposing the individual cloves. Do not peel. Place bulbs in a baking dish or pie plate and drizzle with extra virgin olive oil and a pinch of salt. Bake for 35 minutes until garlic is soft and spreadable.
