Ingredients:
2 12.5 oz. cans of chunk chicken breast
1/2 cup low fat mayonnaise (We like Hellmann's with Olive Oil Mayonnaise Dressing)
1/2 cup chopped grapes (We like purple for color, but any grapes will do.)
1/2 cup minced onion
1/2 cup chopped celery
2 tsp. garlic salt
2 tsp. pepper
1 Tbsp. dill (fresh or dried)
2 tsp. lemon juice
Salad garnish (recipe to follow)
Make Dinner:
Place chicken in medium mixing bowl. Use a fork to break up chicken into smaller bite size pieces. Add mayonnaise and mix thoroughly. Chop grapes, onion, and celery and add to chicken. Add salt, pepper, dill and lemon juice. Mix. Serve atop Salad Garnish.
Salad Garnish
10 large leaves of red leaf lettuce
2 roma tomatoes
1 cucumber
3/4 cup mandarin oranges
1 Tbsp. dill
Arrange two large lettuce leaves on a dinner plate. Using an ice cream scoop, place a scoop of chicken salad in the center of the lettuce. Chop tomatoes and cucumbers. Sprinkle tomatoes, cucumbers and mandarin oranges on surrounding lettuce. Sprinkle entire dish with a pinch of dill. Enjoy!
