8 slices of 100% whole wheat bread (We love Dave's Killer bread!)
1 pound bacon
8 medium sized Romaine lettuce leaves
8 slices heirloom tomatoes
4 Tbsp. light mayonnaise (We like Hellmann's)
4 Tbsp. peanut butter (We like Adam's Natural)
Cook sliced bacon over medium heat until crisp. Drain on paper towels. Toast bread until golden brown. To make PBLT sandwich, spread 1 Tbsp. mayonnaise on one slice of toasted bread. On the other slice, spread the peanut butter. Layer 2 lettuce leaves and 2 slices of tomato on the mayonnaise slice of bread. Layer 4 slices of bacon on the peanut butter slice. Put the two sides together to assemble. Cut sandwich in half and serve with tortilla chips and fresh fruit.
