Ingredients:
1 15 oz can pink salmon
1/4 cup low fat mayonnaise
1 Tbsp. mustard
1 tsp. salt
1 tsp. pepper
1 Tbsp. dill
4 slices sharp cheddar cheese
4 brioche rolls
1/4 cup butter
Make Dinner:
Preheat oven to Broil. Place canned salmon, mayonnaise, mustard, salt, pepper and dill into a medium mixing bowl. Stir well to combine. Slice each brioche roll in half. Spread 1/2 Tbsp. butter onto each half. Heat a large frying pan over medium high heat. Place buns face down into hot pan for 3 minutes until golden brown. Remove buns from frying pan and place 3/4 cup of salmon mixture onto bottom portion of each brioche roll. Top with cheese and place open-faced onto a cookie sheet. (Do not place tops of rolls.) Place cookie sheet under oven broiler for 5 minutes until cheese is melted. Remove Salmon Melts from oven and place tops of each roll onto sandwiches. Serve Salmon Melts with freshly sliced tomatoes and crisp potato chips.
