Ingredients:
2 Tbsp. butter
2 Tbsp. olive oil
1 cup chopped celery
1 cup chopped carrots
1 cup chopped onion
1 Tbsp. minced garlic
2 Tbsp. lime juice
2 tsp. salt
2 tsp. pepper
2 tsp. thyme
2 Tbsp. curry powder
1 15 oz. can coconut milk
2 cups chopped, cooked turkey
2 cups chicken broth
Make Dinner:
Heat butter and olive oil in a large saucepan over medium heat. Add celery, carrots, onion and garlic. Saute for 15 minutes until vegetables begin to soften. Add lime juice, salt, pepper, thyme and curry powder. Saute another 5 minutes to blend flavors. Add coconut milk and bring just to a boil. Reduce heat to medium low. Add chopped turkey and chicken broth. Simmer another 15-20 minutes, stirring periodically. Serve soup with hot crusty bread.
