Serves 4
Ingredients:
4 rib eye steaks
Salt and pepper
5 oz. gorgonzola cheese, crumbled
3/4 cup half and half
1 tsp. black pepper
Make Dinner:
Preheat oven Broiler to High. Salt and pepper steaks and place on broiler pan. Broil steaks for 3-5 minutes per side, depending on taste.
While steaks are cooking, heat gorgonzola cheese, half and half and black pepper over medium heat in a small saucepan until cheese begins to just bubble. Stir periodically to blend sauce. Reduce heat to low and simmer for 10 minutes. Serve steaks drizzled with Gorgonzola Cream Sauce and sprinkled with fresh gorgonzola cheese.
Spinach Salad
2 cups fresh baby spinach
1/4 cup sundried tomatoes
1/4 cup candied pecans
1/4 cup gorgonzola cheese
Garlic Vinaigrette (recipe to follow)
Divide spinach evenly placing 1/2 cup of leaves on each plate. Top with 1 Tbsp. each sundried tomatoes, pecans and cheese. Drizzle with 2 Tbsp. of Garlic Vinaigrette.
Garlic Vinaigrette
3/4 cup olive oil
1/4 cup balsamic vinegar
1 Tbsp. minced garlic
1 tsp. salt
1 tsp. pepper
1 Tbsp. sugar
Place all ingredients in a blender or food processor and pulse until smooth.
