Makes 12 crab cakes
Ingredients:
1 egg
1 Tbsp. dijon mustard
2 tsp. lemon juice
1 Tbsp. worcestershire sauce
1/2 cup mayonnaise
1/4 cup green onion, finely chopped
1 tsp. salt
1 tsp. pepper
1 Tbsp. dill
1 pound lump crab meat (We like blue crab, claw meat.)
2 cups ground Ritz crackers
2 Tbsp. butter
Make Dinner:
In a medium mixing bowl, beat egg until smooth. Add mustard, lemon juice, worcestershire sauce, mayonnaise, green onion, salt, pepper and dill. Mix well. Add crab meat and cracker crumbs. Gently combine ingredients keeping crab intact.
Melt butter in a medium frying pan over medium heat. Form crab mixture into small cakes. Fry 2-3 minutes per side until golden brown. Serve with Jalapeno tartar sauce and a crisp green salad.
Jalapeno Tartar Sauce
1 1/2 cup mayonnaise
2 1/2 Tbsp. lemon juice
1 jalapeno pepper, seeds removed, finely chopped
1/4 cup dill pickle, finely chopped
1 Tbsp. fresh cilantro, finely chopped
2 tsp. Tabasco sauce
1 tsp. paprika
1 tsp. salt
Combine all ingredients in a small mixing bowl and whisk until smooth. Chill until ready to serve.
