Serves 4
Ingredients:
1 pound boneless, skinless chicken breast
2 cups flour
2 Tbsp. onion powder
2 Tbsp. garlic salt
1 Tbsp. black pepper
2 Tbsp. butter
2 Tbsp. olive oil
8 cups chopped romaine lettuce
1/2 cup shredded carrots
1/2 cup diced tomatoes
1/2 cup shredded cheddar cheese
1/4 cup chopped green onions
Make Dinner:
Chop chicken breast into 1 inch pieces. In a medium mixing bowl, combine flour, onion powder, garlic salt, and pepper. Dredge chicken pieces in flour. Heat butter and oil in a large frying pan over medium high heat. Fry chicken for 5 minutes per side until golden brown.
While chicken is cooking, arrange 2 cups of lettuce on each of 4 dinner plates. Top with 2 Tbsp. carrots, 2 Tbsp. tomatoes, 2 Tbsp. cheese and 1 Tbsp. green onions. Arrange chicken pieces atop salad. Serve with your favorite salad dressing.
