Ingredients:
1 cup quinoa
2 cups chicken broth
1 pound mahi mahi fillets
2 Tbsp. butter
2 Tbsp. olive oil
2 Tbsp. lemon juice
1 Tbsp. minced garlic
2 tsp. sea salt
2 tsp. black pepper
Make Dinner:
Rinse quinoa thoroughly before cooking. In a medium saucepan, combine quinoa and chicken broth. Cover and bring to a boil over medium high heat. Reduce heat low and simmer for 20 minutes.
While quinoa is cooking, sprinkle salt and pepper evenly over fish fillets. Heat butter and olive oil in a large frying pan over medium heat. Add lemon juice and garlic. Stir to combine. Place fish into lemon butter and increase heat to medium high. Pan fry fish 5-6 minutes per side until firm and golden brown.
