Ingredients:
1 pound beef stew meat
1/4 cup flour
2 Tbsp. olive oil
1 cup chopped onion
2 cups baby carrots
2 cups chopped red potatoes
1 Tbsp. minced garlic
1/2 cup red wine
2 cups beef broth
2 tsp. black pepper
2 tsp. thyme
Make Dinner:
Place flour in a medium mixing bowl. Add cubed beef stew meat. Toss meat with flour to coat. Heat olive oil in a large saute pan over medium high heat. Add stew meat and sear for 3-5 minutes until meat begins to brown. Pour beef into slow cooker. Add chopped onion, carrots and potatoes. Mix to combine. Add garlic, red wine, beef broth, pepper and thyme. Stir well. Cook on low heat for 8-10 hours or on high heat for 4-6 hours. Serve with fresh bread and a glass of merlot.
