Ingredients:
2 Tbsp. butter
1 cup chopped celery
1 cup diced onion
1 cup diced carrots
1 Tbsp. minced garlic
2 cups chopped cooked boneless skinless chicken breast (Shortcut: Use premade rotisserie chicken from the supermarket.)
2 Tbsp. flour
1 Tbsp. salt
1 Tbsp. pepper
1 Tbsp. thyme
1 cup chicken broth
1/2 cup half and half
2 pie crusts
1 egg + 2 Tbsp. water
Make Dinner:
Preheat oven to 375 degrees.
Melt butter in a large saute pan over medium heat. Add celery, onion, carrots and garlic. Saute vegetables for 8-10 minutes. Add chicken and stir to combine. Add flour, salt, pepper and thyme. Mix well. Add chicken broth and stir to create a thick sauce. Add half and half. Sauce will become creamy. Pour chicken mixture into premade pie crust. Cover with second crust. Crimp edges to seal. In a small mixing bowl, whisk egg with water to create an egg wash. Brush top of pie with egg mixture. This will create a golden shiny top to the pie. Bake for 30-35 minutes at 375 degrees until crust is golden brown. Remove from oven and allow to rest 5-10 minutes before serving.
