Ingredients:
8 fillets of sole
1 pound bay shrimp
1 cup Ritz cracker crumbs
1/4 cup + 2 Tbsp. lemon juice
2 tsp. salt
2 tsp. pepper
2 tsp. dill
2 Tbsp + 1/4 cup melted butter
Paprika
Salt
Pepper
8 sweet potatoes
Make Dinner:
Preheat oven to 400 degrees. Place shrimp, cracker crumbs, 1/4 cup lemon juice, salt, pepper, dill and 2 Tbsp. melted butter in the blender. Pulse for 15-30 seconds until just blended. Place sole fillets flat on a baking sheet sprayed with cooking spray. Sprinkle with salt and pepper. Scoop 1/2 cup shrimp stuffing mixture onto each fillet. Roll fish lengthwise, folding each end around the stuffing. Return each stuffed fillet to baking sheet open end down. Combine 2 Tbsp. lemon juice and 1/4 cup melted butter in small mixing bowl. Drizzle fish with half of the melted lemon butter and sprinkle each fillet with a pinch of salt, pepper and paprika. Bake at 400 degrees for 15 minutes.
While fish is baking, pierce holes in sweet potatoes. Roast potatoes in microwave oven for 5-10 minutes until soft. Serve each alongside fish with a drizzle of lemon butter.
