Serves 4
Ingredients:
4 ahi tuna steaks
1/2 cup soy sauce
1/4 cup honey
1/4 cup olive oil
1/4 cup sesame oil (If you don't have sesame oil, use another 1/4 cup of olive oil.)
2 Tbsp. minced garlic
Juice of 2 small limes
2 Tbsp. chopped cilantro (optional)
Make Dinner:
Combine soy sauce, honey, olive oil, sesame oil, garlic, lime juice and cilantro in a medium sized mixing bowl. Marinate ahi steaks in mixture for 15 minutes. While steaks are marinating, heat grill (We use an indoor grill such as the Cuisinart Panini Grill or the George Foreman.) to medium high heat. Grill steaks for 5 minutes per side.
While ahi is cooking, boil 4 quarts of water in a medium saucepan. Add 8 oz. orzo pasta and 1 chicken bouillon cube. (Chef's Note: If you don't have bouillon cubes, boil pasta per recipe and season with salt and pepper.) Boil for 9 minutes or until pasta is al dente. Drain and set aside.
Serve ahi steaks with orzo pasta and fresh Fruit Salad.
Fruit Salad
2 apples, finely chopped
2 bananas, sliced
6 oz. blueberries
2 cups red grapes, chopped
2 Tbsp. lime juice
Combine chopped apples, sliced bananas, blueberries and chopped grapes in a medium serving bowl. Add lime juice. Toss to coat.
