Serves 4
Ingredients:
4 French Sandwich rolls (hoagie rolls)
1/4 cup butter (For a lighter version, use olive oil instead.)
1 Tbsp. minced garlic
15 oz. canned albacore tuna, packed in water
1/4 cup low fat mayonnaise (We like Hellmann's.)
2 tsp. dill
8 1/4 inch slices sharp cheddar cheese
8 slices fresh tomato
Make Dinner:
Preheat oven broiler to high. Heat butter in a microwave safe bowl for 1 minute. Add minced garlic, stir, and microwave 30 seconds more until butter is melted. Slice sandwich rolls in half lengthwise. Brush 1/2 Tbsp. garlic butter onto each slice. Place rolls, butter side up, on a broiler pan. Broil for 3 minutes until golden brown. Remove bread from oven and place tops of rolls on a cooling rack to cool.
Drain liquid from tuna and combine tuna and mayonnaise in a medium mixing bowl. Add dill and mix well. Place 3/4 cup of tuna mixture on the bottom slice of each sandwich roll. Top each half with 2 slices of cheddar cheese. Place sandwiches under oven broiler for another 3 minutes until cheese is bubbly. Remove from oven and top with sliced tomatoes, a sprinkling of dill, and the top portion of the sandwich roll. Serve immediately.
