1 whole avocado, sliced
1/2 cup mayonnaise
1 tsp. black pepper
1 pound sliced bacon, cooked until very crispy
12 slices sourdough bread (or your favorite sandwich bread)
1/2 pound sliced deli ham
1/2 pound sliced deli turkey
8 slices smoked gouda (or your favorite cheese)
4 tsp. Dijon mustard
8 slices roma tomato
4 large romaine lettuce leaves
In a small mixing bowl, combine avocado slices, mayonnaise and black pepper. Mix until smooth.
Toast all twelve slices of bread until golden brown. Begin with four slices of bread. Spread each slice generously with Avocado Mayonnaise. Top each of the four pieces of bread with two slices of ham, two slices of turkey, and two slices of cheese. Spread 1 tsp. of mustard atop cheese and top with another slice of bread. Spread top of second piece of bread with Avocado Mayonnaise. Top Mayo with 2-3 slices of crisp bacon. Place two tomato slices atop bacon and top with crisp lettuce. Spread Avocado Mayonnaise on last four pieces of bread and place each, mayonnaise side down, on top of each sandwich. Serve with fresh fruit and veggies and a side of crisp potato chips.
