Ingredients:
1 pound raw large shrimp, cleaned with tail on
2 eggs
1 1/2 cups unsweetened coconut
1 1/2 cups Panko bread crumbs
2 tsp. garlic salt
1 tsp. black pepper
3 cups canola oil
Sweet chili sauce
Make Dinner:
Beat eggs in a medium mixing bowl. In a second mixing bowl, combine coconut, bread crumbs, salt and pepper. Heat oil in a large frying pan over medium high heat. While oil is heating, coat the first 8-10 shrimp in raw egg. Then, roll shrimp, one at a time, in coconut/bread crumb mixture using hands to press mixture onto shrimp, covering them completely. When oil is hot, place shrimp in frying pan and fry for 5-7 minutes until shrimp are golden brown. Continue coating and frying shrimp until complete. Serve with a side of sweet chili sauce for dipping and a leafy green salad.
