Recipe #155: Macadamia Crusted Tilapia & Broccoli Rice Pilaf

We love macadamia nuts so when we saw them in the baking aisle of our local supermarket this week, we couldn't resist whipping up tonight's quick and delicious dinner: Macadamia Crusted Tilapia. We combine macadamia nuts, flour, salt and pepper for just a few seconds in the blender to create an amazing crust perfect for any fish. We used tilapia for this recipe, but red snapper or cod would also be great. We serve our fish with easy Broccoli Rice Pilaf. This dinner is super for a Saturday night, but you just might want to tuck it away for Valentine's Day. It's that good!

30 minutes
Serves 6

Ingredients:
6 tilapia fillets
Juice of 1 whole lemon
1 1/2 cups chopped macadamia nut pieces (found in the baking aisle of the supermarket)
1 cup flour
2 tsp. garlic salt
2 tsp. black pepper
1/4 cup olive oil

Broccoli Rice Pilaf
2 cups jasmine rice
4 cups water
1 cup chopped broccoli florets
1 tsp. salt
2 Tbsp. Mrs. Dash Tomato Basil Garlic Salt Free Seasoning

Make Dinner:
Place rice, water, broccoli and seasonings in a medium saucepan. Cover tightly and bring to a boil over medium high heat. As soon as the water boils, reduce heat to low. Cook rice for 20 minutes without removing the lid. After 20 minutes, remove lid and fluff rice with fork.

While rice is cooking, combine macadamia nuts, flour, garlic salt and pepper in the blender. Pulse for 5-10 seconds until combined. Mixture will be crumbly. (Chef's Note: Do not over blend or you will make macadamia nut butter.) Remove mixture from blender and spread in a shallow baking dish.

Heat canola oil in a large frying pan over medium heat. Squeeze lemon juice completely over fish fillets. Dip each fillet into macadamia mixture, using hands to press crust onto fish. Fry fish for 3-5 minutes per side. Remove from heat and serve with Broccoli Rice Pilaf.
