Ingredients:
2 pounds skirt steak (Chef's Notes: The 'skirt' steak is specific as it is thinner and rolls well.)
1 cup crumbled feta cheese
1/4 cup chopped basil leaves
1 cup diced Roma tomatoes
2 tsp. sea salt
2 tsp. black pepper
Make Dinner:
Heat BBQ to medium high. Combine feta cheese, chopped basil leaves and diced tomatoes in a medium mixing bowl. Sprinkle steak evenly with salt and pepper. Place 2-3 Tablespoons of feta mixture atop each piece of steak (more for larger pieces). Roll each piece of steak from end to end and secure with toothpicks. Using a sharp, serrated knife, slice each steak roll to create 1 inch wide pinwheels, securing each one with a toothpick. Grill steak over medium high heat for 5 minutes per side. (If preferred, steaks can also be cooked on a cookie sheet under an oven broiler for 5-7 minutes per side.)
