Makes 24 ravioli
Ingredients:
1 18 oz. package fresh ravioli (We like Chicken Artichoke ravioli found in the refrigerated section of your local supermarket.)
2 eggs
1 1/2 cups Italian breadcrumbs
3 cups canola oil
2 cups marinara sauce
1 tsp. salt
Make Dinner:
Heat canola oil in a large frying pan over medium high heat. Beat eggs in a small mixing bowl. Set aside. Place bread crumbs in another small mixing bowl. Dip fresh ravioli first in egg and then in breadcrumbs. Fry breaded ravioli in oil for 2 minutes per side. Remove from oil and drain on paper towels. Salt lightly. Heat marinara sauce in a small saucepan over medium heat for 3-5 minutes. Serve ravioli with a side of marinara sauce for dipping.
