5 red bell peppers
2 pounds ground turkey (Ground chicken works well too.)
2 Tbsp. minced garlic
2 tsp. salt
3/4 cup sweet chili sauce (We like Mae Ploy brand.)
5 slices provolone cheese
Preheat oven to 375 degrees. Using a sharp knife, remove the tops and seeds from each red pepper. Brown ground turkey in a large frying pan over medium high heat. Add garlic, salt, and sweet chili sauce. Mix well and cook another 5 minutes. Scoop cooked turkey mixture into peppers, filling each completely. Place stuffed peppers in a pie pan and top each with a slice of provolone cheese. Bake at 375 degrees for 25 minutes until cheese is melted and golden brown. Serve immediately.
