Ingredients:
12 oz. thick sliced bacon
1 1/2 pound ground beef
2 Tbsp. ketchup
2 Tbsp. mustard
1 tsp. salt
1 tsp. pepper
1/2 pound sliced sharp cheddar cheese
5 brioche buns
Whiskey BBQ sauce (Recipe Below)
Whiskey BBQ Sauce
2 Tbsp. minced garlic
2 cups ketchup
1/3 cup whiskey
2 Tbsp. Worcestershire Sauce
2 Tbsp. honey (If you don't have honey, brown sugar works well.)
2 Tbsp. red wine vinegar
2 tsp. cumin
2 tsp. black pepper
Combine all ingredients in a medium saucepan and bring to a slight boil over medium heat. Reduce heat to low and simmer for 20 minutes.
Make Dinner:
Preheat oven to 350 degrees. Place sliced bacon on a rack on top of a cookie sheet. Cook bacon in hot oven for 15 minutes until very crispy.
Heat BBQ to medium high. While bacon is cooking, combine ground beef, 2 Tbsp. ketchup, mustard, salt and pepper in a medium mixing bowl. Blend with bare hands and form mixture into 5 patties. Grill burgers until cooked through, 5-7 minutes per side. Top each with a slice of sharp cheddar cheese. When cheese is melted, remove from grill and place on a brioche bun. Top each burger with 2 slices of crisp bacon and 3 Tbsp. Whiskey BBQ sauce. Serve burgers with your choice of chips (We like Hawaiian Kettle Style Mango Habanero chips) and a crisp pickle spear.
