Ingredients:
Sweet Potato Fries
3 sweet potatoes
2 tsp. sea salt
1 tsp. dried thyme
Cooking spray
Chicken Nuggets
1 1/2 pounds boneless, skinless chicken breasts
2 eggs
1 cup flour
1 Tbsp. garlic salt
2 tsp. pepper
3 cups canola oil
Make Dinner:
Preheat oven to 375 degrees. Peel sweet potatoes and slice them into spears no more than 1/2 inch thick. Place them on a cookie sheet. Spritz with cooking spray and sprinkle with salt and thyme. Bake for 25 minutes until tender.
While sweet potato fries are baking, chop chicken breasts into 1 inch pieces. Beat eggs in a small mixing bowl and set aside. In a medium mixing bowl, combine flour, salt and pepper. Heat canola oil in a large frying pan over medium high heat. Dip chicken pieces in egg and dredge in flour. Place chicken in hot oil and fry for 3-5 minutes per side until cooked through and golden brown. Remove from oil and drain on paper towels. Serve with your favorite dipping sauce.
