Ingredients:
1 pound top sirloin steak, sliced very thin
1 tsp. salt
1 tsp. black pepper
2 Tbsp. olive oil
1 red pepper, sliced into 1/2" slices
1 yellow pepper, sliced into 1/2" slices
1 large purple onion, sliced into 1/2" slices
1 tsp. sugar
1 tsp. salt
1/2 pound provolone cheese
5 hoagie rolls
Make Dinner:
Heat oven broiler to high heat. Slice steak into 1 inch strips. Season with salt and pepper. Set aside.
Heat oil in a large cast iron skillet over medium high heat. Add peppers and onions. Sprinkle with sugar and salt. Sauté for 5-7 minutes until onions begin to caramelize. Remove from pan and add steak. Sauté quickly for 3-5 minutes until cooked through. Add peppers and onions back into pan and stir to combine. Remove from heat and place 3/4 cup beef mixture onto each hoagie roll. Top with 1-2 slices provolone cheese. Place under oven broiler for 2 minutes until cheese is melted. Serve immediately.
