4 large zucchini
1 pound ground turkey
1 Tbsp. minced garlic
7 oz. canned diced tomatoes, liquid drained
1 tsp. salt
1 tsp. onion powder
1 tsp. black pepper
1 cup grated parmesan cheese
Preheat oven to 375 degrees. Brown ground turkey in a large skillet over medium high heat on the stovetop. Add garlic, tomatoes, salt, onion powder and pepper. Stir mixture often until turkey is cooked through, about 10 minutes.
While turkey is cooking, slice zucchini in half lengthwise. Using a melon baller, remove the center seeds from each zucchini half leaving 1/2 inch of meat along the sides.
Fill each zucchini with ground turkey mixture. Top each with 2-3 Tbsp. grated parmesan cheese. Place on a cookie sheet and bake for 20 minutes at 375 degrees.
