Ingredients:
1 pound spaghetti
1 pound bacon
2 Tbsp. minced garlic
1/4 cup half and half
2 tsp. black pepper
1 cup grated parmesan cheese
2 eggs
2 Tbsp. chopped parsley
Make Dinner:
Bring 4-6 quarts of salted water to a boil in a large pasta pot. Add spaghetti and boil according to package directions until al dente, about 10 minutes.
While pasta is cooking, crisp bacon in a large frying pan over medium heat. When cooked through, remove from pan and drain on paper towels. Set aside. Remove all oil from pan except 2 Tablespoons. Add garlic to pan and sauté over medium high heat for 2 minutes. Reduce heat to medium low and add half and half, black pepper and parmesan cheese. Stir quickly using a wire whisk to create a creamy sauce, another 2-3 minutes. Remove pan from heat completely. Add eggs, stirring constantly, to blend eggs into sauce. Eggs will cook gently as they are stirred. Once the eggs are combined, add crumbled bacon and parsley to sauce. Drain water from pasta and add to sauce. Using cooking tongs, quickly toss pasta in sauce to coat. Serve immediately.
