Yield 8 burgers
Ingredients:
2 15.25 oz. cans black beans, drained
1 cup Italian bread crumbs
1 egg
1 Tbsp. minced garlic
2 tsp. onion powder
2 tsp. cumin
2 tsp. salt
2 tsp. pepper
2 Tbsp. olive oil
8 slices (1/2 pound) Colby jack cheese
8 hamburger buns (We like brioche.)
Optional Condiments
2 roma tomatoes, sliced
1 small onion, sliced
8 lettuce leaves
Ketchup
Mustard
Make Dinner:
Blend black beans, bread crumbs, egg, minced garlic, onion powder, cumin, salt and pepper in the food processor or blender for 1 minute or until smooth. Heat olive oil in a large skillet over medium high heat. Drop bean mixture 1/3 cup at a time into hot oil pressing down on each to form beans into patties. Fry burgers 5 minutes per side until edges are crisp. Add 1 slice of cheese to each burger. Reduce heat to low and cover pan to melt cheese, about 2-3 minutes. Remove burgers from pan and place each on a warm hamburger bun. Top with tomato, onion, lettuce, ketchup and mustard to taste.
