Ingredients:
1 whole 6-7 pound chicken
3 Tbsp. + 2 Tbsp. olive oil
2 Tbsp. dry oregano
2 Tbsp. dry thyme
2 Tbsp. cumin
2 Tbsp. sesame seeds
2 Tbsp. sea salt
1 pound whole fingerling potatoes
1 Tbsp. salt
1 Tbsp. black pepper
Make Dinner:
Preheat oven to 350 degrees. Remove chicken from packaging. (Chef's Note: Remove extra parts such as neck and giblets from inside of chicken.) Place chicken in 13 x 9 roasting pan and drizzle with 3 Tbsp. olive oil. In a small mixing bowl, combine oregano, thyme, cumin, sesame seeds and sea salt. Sprinkle chicken generously with seasoning mix. Surround chicken with fingerling potatoes in same roasting pan. Drizzle potatoes with 2 Tbsp. olive oil and sprinkle with salt and pepper. Roast chicken for 20 minutes per pound until cooked through and skin is golden brown.
