Ingredients:
4 pounds flanken beef short ribs
2 Tbsp. minced garlic
1 shallot, diced
3/4 cup brown sugar
3/4 cup soy sauce
1/2 cup water
2 Tbsp. red wine vinegar
1 Tbsp. sesame oil
1 Tbsp. sesame seeds
2 cups white rice
4 cups water
2 Tbsp. rice vinegar
2 tsp. salt
Make Dinner:
Combine garlic, shallot, brown sugar, soy sauce, water, vinegar, sesame oil and sesame seeds in a medium mixing bowl. Add beef ribs. Cover and marinate for a minimum of 1 hour. (Chef's Note: For maximum flavor and tenderness, prepare marinade and add beef first thing in the morning. By dinner time, ribs will be grill ready.)
In a medium saucepan, combine rice, water, vinegar and salt. Cover and bring just to a boil. Reduce heat to low and simmer for 20 minutes. Remove pot from heat.
While rice is cooking, preheat BBQ grill to medium high. Grill ribs 3-4 minutes per side until cooked through and crispy on the edges. Serve with sticky rice and fresh cut orange slices.
