Ingredients:
1 pound linguine pasta
2 Tbsp. butter
2 Tbsp. olive oil
1 Tbsp. minced garlic
1 cup diced onion
1 cup diced celery
1 cup diced carrots
1 cup chopped crimini mushrooms
2 tsp. salt
2 tsp. pepper
1 pound smoked turkey breast, diced into bite size cubes
1 cup half and half
1 cup grated parmesan cheese
1 cup grated cheddar cheese
Make Dinner:
Preheat oven to 375 degrees.
Bring 6 quarts of water to a boil in a large pasta pot. Add linguine and boil 10-12 minutes until al dente. Remove from heat and set aside.
While pasta is boiling, heat butter and olive oil in a large sauté pan over medium high heat. Add garlic, onions, celery and carrots. Sauté for 10 minutes until vegetables begin to soften. Add mushrooms and turkey breast. Sauté another 5 minutes, stirring often. Add half and half and parmesan cheese. Mix well until sauce is creamy.
Drain water from pasta and add pasta to turkey mixture. Toss to coat. Place pasta mixture in a 13 x 9 inch lasagna pan. Top with grated cheddar cheese and bake at 375 degrees for 15 minutes.
