Ingredients:
5 boneless skinless chicken breasts
10 slices deli ham, sliced thin
10 slices Swiss cheese, sliced thin
2 eggs
2 tsp salt
2 tsp. pepper
2 cups Panko breadcrumbs
1/4 cup melted butter
1 tsp. paprika (optional)
Make Dinner:
Preheat oven to 350 degrees. Place chicken breasts between two sheets of wax paper or plastic wrap. Use a meat mallet to pat chicken into thin cutlets being careful not to rip flesh. Place 2 slices of ham and 2 slices of cheese on top of each chicken cutlet. Roll chicken like a jelly roll to secure ham and cheese. Beat eggs in a small mixing bowl. Place Panko breadcrumbs in a second medium sized mixing bowl. Add salt and pepper and gently mix to blend. Dip each rolled chicken breast in egg and then into breadcrumbs, coating completely. Place chicken rolls on a cookie sheet and drizzle with melted butter. Top with a sprinkling of paprika for color. Bake for 25 minutes at 350 degrees until chicken is cooked through and golden brown. Remove from oven and allow chicken to rest 5 minutes before slicing.
