24 hours prep + 8 hours cook time
Serves 5
Ingredients:
3 pounds top round beef roast, sliced thin
1 16 oz. jar Mezzetta Deli Sliced Mild Yellow Pepper Rings
2 cups beef broth (2 cups water + 1 beef bouillon cube works well too.)
1/2 cup vinegar
2 Tbsp. Worcestershire Sauce
2 Tbsp. salt
2 tsp. black pepper
5 large Italian sandwich rolls
Fresh Giardiniera (Recipe Below)
Fresh Giardiniera
1 cup sliced carrots
1 cup cauliflower florets
1 red pepper, sliced
1 jalapeno, stem removed and sliced
1/2 cup olive oil
1 cup white vinegar
1 Tbsp. minced garlic
2 Tbsp. salt
2 tsp. black pepper
Combine carrots, cauliflower florets, red pepper slices, jalapeno slices, olive oil, vinegar, garlic, salt and pepper in a medium mixing bowl. Mix well. Cover and refrigerate 24 hours. (Chef's Note: To save prep time, Fresh Giardiniera can be purchased in a jar in your local supermarket.)
Make Dinner:
Combine sliced beef, sweet yellow pepper rings (Do not drain liquid), beef broth, vinegar, Worcestershire Sauce, salt and pepper in a slow cooker. Cook on low heat for 8 hours. When beef is cooked through, fill each Italian sandwich roll completely with meat. Top with 1/8 cup au jus and Fresh Giardiniera to taste.
