Makes 12 kabobs
Ingredients:
2 pounds flat iron steak, cut into 1/2 inch cubes
1 large onion, roughly chopped into 1/2 inch pieces
2 yellow peppers, chopped into 1/2 inch pieces
2 cups cherry tomatoes
12 wooden skewers
1/3 cup olive oil
Salt and pepper to taste
Mediterranean Rice Pilaf (Recipe Below)
Mediterranean Rice Pilaf
2 Tbsp. olive oil
2 cups rice
1 beef bouillon cube
3 tsp. lemon juice
2 tsp. dried oregano
5 cups water
Heat olive oil in a large skillet over medium high heat. Add rice and sauté for 3-4 minutes until golden brown. Add beef bouillon cube. Mix well. Add lemon juice, oregano and 1 cup of water. Stirring constantly, simmer for 4-5 minutes until liquid is absorbed. Add a second cup of water. Simmer rice until liquid cooks away, stirring frequently. Add next two cups of water, one at a time, and again simmer until liquid is nearly gone and rice is moist and fluffy. Remove from heat.
Make Dinner:
Heat BBQ grill to medium high. Soak wooden skewers in water for 10 minutes. (Chef's Note: This will keep them from burning on the grill.)
Thread skewers with beef cubes, yellow pepper pieces, cherry tomatoes and onion slices, one at a time, until each skewer is full. Drizzle loaded skewers with olive oil and sprinkle with salt and pepper. Grill 5 minutes per side. Serve on a bed of Mediterranean Rice Pilaf.
