Recipe #235: Cornish Game Hens with Roasted Beet Salad

Looking for a way to spice up Monday? We're not making salsa tonight, but we are serving an elegant and unforgettable dinner that will start your week off right. Tonight we're roasting Cornish Game Hens and pairing them with Roasted Beet Salad. It's warm and delicious and the most elegant way we can think of to relax on a Monday night. It takes a pinch more than an hour to create this feast and it is well worth the wait.

1 hour, 15 minutes
Serves 5

Ingredients:
5 Cornish Game Hens
2 1/2 Tbsp. olive oil
3 tsp. sea salt
2 tsp. black pepper
Roasted Beet Salad (Recipe Below.)

Roasted Beet Salad 
2 large red beets
1 head romaine lettuce, washed, dried and chopped into 1/2 inch pieces
1/4 cup diced white onion
2 Roma tomatoes, chopped
Salt and pepper

Make Dinner:
Preheat oven to 350 degrees. Place Cornish game hens side by side in a 13 x 9 inch baking pan. Drizzle with olive oil and sprinkle with salt and pepper. Bake for 1 hour at 350 degrees.

Wash and dry beets. Using a sharp knife, trim the roots and tops from beets. Wrap beets in aluminum foil and bake for 45 minutes at 350 degrees.
(Chef's Note: Place beets in oven with game hens.)

While beets and game hens are roasting, combine chopped lettuce, diced onion, and chopped tomatoes in a large salad bowl. When beets are ready, remove from foil. Peel and slice thin. Top salad with sliced beets. Sprinkle salad with salt and pepper to taste. Serve Cornish hens with Roasted Beet Salad and your favorite salad dressing.
