Ingredients:
1 pound ground pork
3 Tbsp. olive oil
1 Tbsp. minced garlic
1 small onion, diced
2 red potatoes, diced
3 tsp. salt
1 tsp. black pepper
10 eggs
½ cup grated Monterey Jack cheese
Make Dinner:
Brown ground pork in a large sauté pan over medium high heat until cooked through 7-8 minutes. Drain oil and set meat aside.
Preheat oven to 400 degrees. In a large frittata pan, heat olive oil over medium heat. (Chef’s Note: If you don’t own a frittata pan, use a large oven-safe non-stick omelette pan.) Add garlic and onions to oil. Sauté 6-8 minutes until onion begins to sweat. Add potatoes, salt and pepper. Sauté 10-12 minutes until potatoes begin to soften. Add browned ground pork to pan. Mix well. In a separate mixing bowl, beat all 10 eggs and pour into pan ensuring all ingredients are covered. Top with grated cheese. Bake 13-15 minutes at 400 degrees until golden brown. Remove from oven and allow to rest 5 minutes. Use a rubber spatula to gently release frittata from edges of pan. Flip frittata onto large serving plate.
