Ingredients:
6 large butter croissants
6 tsp. low fat mayonnaise
1 pound smoked deli turkey
1 pound bacon
6 slices provolone cheese
2 Roma tomatoes, sliced thin
6 Romaine lettuce leaves
Make Dinner:
Preheat oven to 365 degrees. Place a cooking rack on a large cookie sheet. Arrange sliced bacon atop cooking rack. Bake bacon for 20 minutes until crisp. Remove from oven and drain on paper towels. (Chef's Note: The majority of the bacon fat should have remained in the cookie sheet making the bacon extra crispy.)
Slice each croissant open using a sharp, serrated knife. Spread each side of each croissant with 1/2 tsp. low fat mayo. Layer bottom half of each croissant with 3-4 slices smoked deli turkey. Top with 3 slices crispy bacon and 1 slice of provolone cheese. Add 2 slices of tomato and Romaine lettuce. Cover with top half of each croissant. Serve with fresh fruit.
