Ingredients:
5 lobster tails
1 stick + 3 Tbsp. salted butter
3 Tbsp. + 1 Tbsp. lime juice
1 Tbsp. minced garlic
1 cup water
Vegetable Medley (Recipe Below)
Make Dinner:
Preheat oven to 375 degrees. Combine 1 stick butter, 3 Tbsp. lime juice and garlic in a small microwave safe bowl. Heat in microwave for 30 seconds or until butter is melted. Arrange lobster tails in a 13 x 9 inch baking pan. Brush butter mixture generously over lobster tails. Add 1 cup of water to bottom of pan and bake lobster tails at 375 degrees for 25-30 minutes until cooked through. Brush tails with butter mixture every 10 minutes while baking. While lobsters are cooking, melt remaining 3 Tbsp. butter with 1 Tbsp. lime juice in microwave for 15 seconds or until melted. Serve lobster tails with additional lime butter for dipping and a side of Vegetable Medley.
Vegetable Medley
2 Tbsp. olive oil
5 red potatoes, diced
1 red pepper, chopped
1 medium onion, diced
2 tsp. garlic salt
1 tsp. black pepper
Heat olive oil in a large sauté pan over medium heat. Add diced potatoes, chopped peppers and diced onions. Season with salt and pepper. Sauté 20-25 minutes, stirring often until veggies are soft.
