Ingredients:
1 pound ground turkey sausage
1 pound boneless, skinless chicken breasts
2 Tbsp. olive oil
1 medium onion, chopped
1 Tbsp. minced garlic
1 15 oz. can Cannellini beans
1 15 oz. can Garbanzo beans
8 oz. frozen corn
2 1/2 tsp. cumin
1 tsp. salt
2 tsp. black pepper
2 1/2 cups water
3 Tbsp. fresh, chopped cilantro
1 cup diced fresh tomatoes
Make Dinner:
Brown ground turkey sausage in a large frying pan over medium high heat until sausage is cooked through, about 8 minutes. Drain oil and set sausage aside.
While sausage is cooking, chop chicken breasts into bite size pieces. Heat olive oil in a large Dutch oven over medium high heat. Add chopped onion and garlic and sauté 5 minutes. Add chicken to pot and sauté until cooked through, about 8 minutes. Drain liquid from Cannellini and Garbanzo beans. Add beans and corn to pot. Add cumin, salt and pepper and mix well. Add water and bring to a boil, stirring often. Reduce heat to low. Cover and simmer for 20 minutes, stirring periodically. When ready to serve, add fresh cilantro and tomatoes. Stir to combine. Simmer another 5 minutes. Serve chili in large soup bowls.
