Ingredients:
2 pounds ground chicken (Ground turkey also works if you can't find chicken.)
1 Tbsp. olive oil
1/2 cup minced onion
1 Tbsp. minced garlic
3 Tbsp. finely chopped cilantro
2 tsp. salt
2 Tbsp. lime juice
1 Tbsp. red pepper flakes
6 whole wheat hamburger buns
2 Roma tomatoes, sliced
1 jalapeno, diced, seeds and stem removed
Homemade Guacamole (Recipe Below)
Make Dinner:
Heat BBQ to medium high. Combine ground chicken, olive oil, minced onion, garlic, cilantro, salt, lime juice and red pepper flakes in the blender. Pulse for 15-20 seconds until smooth. Use hands to form chicken mixture into 6 equal patties. Grill burgers for 5 minutes per side until cooked through. Serve on whole wheat buns topped with sliced tomatoes, Homemade Guacamole and diced jalapenos.
Homemade Guacamole
4 avocadoes
1 Roma tomato, chopped
1/2 small onion, chopped
2 Tbsp. cilantro, chopped
Juice of 1 lime
2 tsp. garlic salt
Open each avocado, remove pit, and scoop meat into medium mixing bowl. Add chopped tomato, onion, cilantro, lime juice and garlic salt. Blend until smooth.
