4 pounds ling cod steaks, 2 inches thick
2 sticks salted butter
Juice of 1 whole lemon
1 Tbsp. minced garlic
1 1/2 Tbsp. dried dill
1 bunch asparagus
1 cup fresh, shredded parmesan cheese
Preheat BBQ grill to medium high heat. In a small saucepan, melt butter. Add lemon juice, minced garlic and dill. Gently simmer over medium low heat for 5 minutes.
To prepare fish, place each steak on a 12 x 18 inch piece of aluminum foil. Fold sides of foil up. Spoon Lemon Dill Butter generously over fish. Pinch edges of aluminum foil closed to create a 'tent' in which to cook the fish. Grill fish on the BBQ, 8-10 minutes per side until cooked through.
While fish is grilling, prepare asparagus by snapping bottom 1/2 inch from each stalk. Place asparagus in a grill basket and place on BBQ. Spoon lemon dill butter over asparagus and grill, turning periodically, until browned, about 10 minutes. Top with a sprinkling of fresh shredded parmesan cheese.
Serve ling cod with grilled asparagus and freshly sliced watermelon.
