Makes 24 Pizza Rolls
2 pounds ground Italian sausage (We like turkey sausage.)
2 cups marinara sauce
8 oz. pepperoni, chopped
1 red pepper, diced
1 medium onion, diced
1 1/2 pounds shredded mozzarella cheese
24 eggroll wrappers
3 cups canola oil
Brown Italian sausage in a large skillet over medium high heat, stirring frequently, until cooked through and crumbly. Drain oil from sausage. Add marinara sauce to pan and stir well to combine. Reduce heat to medium low and simmer for 5 minutes until sauce is warm.
Heat canola oil in a large frying pan over medium high heat. To roll pizza rolls, place 2 Tbsp. Italian sausage/marinara mixture in each eggroll wrapper. Top with a sprinkling of chopped pepperoni, red pepper, diced onion and cheese. Fold pizza rolls according to eggroll package directions. Seal edges and place in hot oil. Fry for 3 minutes on each side until golden brown. Drain on paper towels. Serve with fresh fruit. We like slices of fresh melon.
