Serves 6-8
Ingredients:
1 pound rigatoni pasta
1 pound lean ground beef
1 Tbsp. minced garlic
1 Tbsp. dried minced onion
1 24 oz. jar marinara sauce (We like Trader Joe's Organic.)
1 tsp. dried oregano
1 tsp. dried basil
3/4 pound shredded mozzarella cheese
Make Dinner:
Bring 6 quarts of water to a boil in a large pasta pot. Boil pasta until al dente, about 12 minutes. Remove from heat and set aside.
While pasta is boiling, brown ground beef in a large frying pan over medium high heat. Add garlic and onion and sauté until beef is cooked through, about 7 minutes. Drain liquid from beef. Add marinara sauce, oregano and basil and bring just to a boil. Reduce heat to medium low and simmer 5 minutes to combine flavors.
Preheat oven broiler to high. Drain pasta and add rigatoni to meat sauce. Toss to coat. Pour pasta into a 13 x 9 baking pan and top with mozzarella cheese. Place under oven broiler for 3 minutes until cheese is melted and bubbly.
